Raw Rainbow Pad Thai


Hello beauties!

It’s been a while since I’ve posted, especially a recipe because I have been very caught up with all the beautiful happenings of life right now; beginning my last semester of undergrad, taking seven classes, working, prepping for my big move to Washington to pursue my doctorate all while trying to thoroughly enjoy my last few months with my family and friends!

I did a water fast at the beginning of January and my goodness, it is so crazy amazing the type of insight you can receive by simply removing all energy blocks, connecting with yourself at the deepest and most intimate level. This last water fast was decided in a day with no preparation but I had spirit loving and guiding me through it. You uncover this sacred relationship between your body and the things you put in it and it becomes clear the madness of consuming things that hurt and destroy your body. When consuming only water, you allow your body and organs to rest and regenerate, healing at the deepest possible level, needless weight falls off over night, your eyes get brighter, your skin becomes so clear and glowy and you feel the most beautiful connection to your inner self and with spirit. And when preparing to break the fast, you can’t help but think, what can I consume that will allow my body to remain in this happy and sacred place? Our bodies talk to us in subtle signs, gently letting us know what is building us and what is destroying us. We are meant to feel full of LIFE, full of love, light, and high vibrational goodness every single day. If we feel tired, run down, anxious, depressed and weighed down by heavy energies, our bodies are trying to tell us we are adding to the destruction instead of the build. WE GET TO CHOOSE. Many of us have no idea how amazing we are designed to feel and I’m so grateful for this beautiful insight to be instilled within me during this fast. Even I am constantly refining and I know this next step on my journey includes more raw, living foods and next to no dead, processed foods. We are all such beautiful, capable beings and our inner guides hold an infinite amount of wisdom and knowledge; quieting the ego and allowing the soul to speak will take you to the most beautiful places imaginable. Quiet your mind, listen to your body, go inside and don’t be afraid; meet yourself with LOVE and with kindness

That being said, I went to work in the kitchen devising some delicious new raw recipes and this one has to be my favorite, it’s a raw pad thai with almond butter sauce! Almond butter is literally the glue that holds my food pyramid together.

For the Pad Thai:
1 zucchini, spiralized
1/2 cup purple cabbage, finely chopped
1 carrot, shredded
1/2 red pepper, chopped
1/2+ cup broccoli
1/2+ cup baby bella or shiitake mushrooms
3 stalks of green onion, chopped
2 cloves of garlic, minced

For the sauce:
2+ tbsp almond butter
1 1/2 tsp coconut aminos
1 tsp coconut nectar
juice of 1 lime
2+ tsp ginger (depending on how ginger-y you like it)
1/2 tsp black pepper
